According to the tradition (dating back to the 16th century) of Sugar Cookies in history, it also had a protective function to protect the family and the whole farm from the dark forces. Sugar was to be baked only from flour from its own crop, which symbolized that next year also a high crop would come. The dough was to be rubbed against the trees, and the remaining dough water was poured into the cattle feed to keep milking well.
